FRESH TOMATO & BASIL PASTA

With all of this crazy snowy weather, I decided to fool my taste buds with a great summer pasta... in the winter time!!!
It may not be farm veggies, but they are organic from Trader Joes!

FRESH TOMATO & BASIL PASTA















Ingredients:
2-3TBSP Olive Oil
Pinch of red pepper
2 garlic cloves
1 Container of grape tomatoes
Handful of fresh basil
pinch of salt


First things first... rinse your tomatoes!
















Cut all your tomatoes in half.
I believe this releases the juices that really punch up the flavor in this wonderful dish!
















Start your oil over a medium flame.
I use about 2-3 TBSP oil, up to you.
Pinch of red pepper flakes.
2 garlic cloves smashes with the flat of a butcher's knife.
Bring this to a simmer.
















Add your tomato halves to the simmering oil.































Get a handful of fresh basil.
















Loosely chop up your basil.
















Add the basil to your tomato mix.
















Add a pinch of salt

















Stir and let simmer for about for about 3 minutes.
Then, remove your garlic pieces.
















VOILA!
Sauce is ready!
















I cook my pasta and toss it together in the pan with the tomatoes.
Here you go!!! Seriously light and delicious!
















Now... some people will add mozzerella to this dish. Add the mozzerella now, while its all hot, but not me. I am a Grana Padano kinda girl!!!
This is so good, you will never buy jarred sauce again!

KID TIP:
For my kids, I put half of this in my magic bullet and puree it.






































Toss it with the pasta and kids eat it without fear of the green stuff!!!
















My boys are cheese lovers! So I top there's off with Grana Padano too!!!

Blog Reader Shares Pizza!!!!


Seriously, this is exciting for me. When someone really tries these recipes and shares success! And I just think it is nice to have good food! Here is a photo that was shared by a very good friend of mine after making the pizza recipe I shared! Looks delicious!

















She said she made my pizza sauce, but added fresh garlic and basil and it was perfect!
